Chinese Recipes – Braised Chicken with Oyster & Fatt Choy

Ingredients

  • 1.2-1.5kg whole chicken, cut into pieces
  • 1 tbsp Ginger juice
  • 1 tbsp Salt
  • 5 cloves Garlic, finely chopped
  • 12 Chinese mushrooms, soaked till tender
  • 10-12 Medium size dried oysters, wash & drain
  • 12 g Fatt Choy (black moss), wash and drain
  • 1 large Carrot, sliced

For the Sauce:

  • 750 ml Water
  • 1 1/2 tbsp Chicken stock concentrate
  • 2 tbsp Light soy sauce

For thickening:

  • 1 tbsp Cornflour
  • 4 tbsp Water
  • 2 tbsp Chinese rice wine

Serve 8

Chinese Recipes – Ginseng Prawns

Ingredients

  • 400g Large prawns
  • 1 tbsp vegetable oil
  • 1 tbsp Ginseng powder
  • Kei Chee
  • 1 tbsp Chinese Shaoxing wine
  • 1 tbsp Sugar

For the Sauce:

  • 1 tbsp chicken stock
  • 1/2 tbsp cornflour
  • 1/2 tbsp salt
  • 100ml water

For Garnish:

  • few coriander leave (optional)

Serve 4-6

Chinese Recipes – Family Onion and Ginger Duck Recipe

Ingredients

  • 6 medium-sized onions
  • 75-100 g (3-4 oz) roast pork deep frying
  • 6 slices root ginger
  • 6 medium-sized Chinese dried mushrooms
  • 22 ml (1 1/2 tablespoons) lard (use oil if not available)
  • 45 ml (3 tablespoons) soy sauce
  • 125 ml (i pint) oil for semi deep frying
  • 1 Chinese cabbage or 225 g (1/2 lb) celery
  • 15 ml (1 t4blespoon) oyster sauce
  • 1.35-1.8 kg (3-4 lb) duck

Serve 8-10
