Ingredients

  • 1 large fish head (675 g (1 1/2 lb) with part of body if available
  • 1-2 rashers bacon
  • 2 leeks
  • 2 cakes bean, curd
  • 22 ml (1 /12 tablespoons) lard (use oil if not available)
  • 2-3 slices root ginger
  • 1.25 liters (2 1/2 pints) stock
  • 1 chicken stock cube
  • salt and pepper

    Serve 4-6
