Chinese Recipes - Nutty and Hot Quick-Fried Shredded Beef Recipe
Ingredients
- 900 g (2 lb) leg of beef
- 15 ml (1 tablespoon) salt
- 4 slices root ginger
- 7 ml (1/2 tablespoon) chili powder
- 2 ml (1/2 teaspoon) b1ack pepper
- 10 ml (2 teaspoons) caster sugar
- pinch five-spice powder
- 22 ml (1 1/2 tablespoons) soy sauce
- 15 ml (1 tablespoon) hoisin sauce
- 15 ml (1 tablespoon) dry sherry
- 7 ml (1/2 tablespoon) sesame oil
- 15 ml (1 tablespoon) sesame paste (or peanut butter)
- oil for deep-frying
Serve 6-8
Method:

Cut the beef into very thin slices. Rub these with the salt, and leave to dry for 3 hours. Shred the ginger, and mix together the chili powder, pepper, sugar and five-spice powder. Mix the soy sauce, hoisin sauce, sherry, sesame paste and sesame oil until well blended.

Place the beef slices on a wire rack, and cook them in a preheated oven at 180°C (350°F)/Gas 4 for 15 minutes. Transfer them to a steamer and steam for 1 1/2 hours. Remove to cool.

When the meat is cold, cut along the fiber, chopping it into long matchstick sized shreds. Sprinkle these with the mixed dry ingredients and rub this in thoroughly. Leave to season for 30 minutes.

Add the sauce mixture of soy sauce, etc, and rub this into the seasoned beef. Leave to marinate for 2-3 hours. When quite dry, spread the slices out in a fine-meshed wire basket and deep-fry over a moderate heat for 3-4 minutes, remove and drain thoroughly.
