Ingredients

  • 225-350 g (1/2-3/4 lb) fillet of fish (sole, turbot, cod, carp, bream, halibut, etc)
  • 7 ml (1/2 tablespoon) salt
  • 15 ml (1 tablespoon) corn flour sauce
  • 1 egg-white
  • 3 stalks spring onion
  • 1 liter (1 1/2-2 pints) chicken stock
  • 3 slices root ginger
  • 10 ml (2 teaspoons) salt
  • 2 ml (1/2 teaspoon) white pepper
  • 22 ml (1 1/2 tablespoons) soy
  • 75 ml (5 tablespoons) vinegar

    Serve 4

    Ingredients

    • 2 pairs chicken kidneys and liver
    • 75 g (3 oz) pig’s kidney
    • 50 g (2 oz) bamboo shoots
    • 75 g (3 oz) cooked breast of chicken
    • 50 g (2 oz) cooked duck
    • 25 g (1 oz) cooked chicken skin
    • 225 g (1/2 lb) dried bean curd
    • 75 g (3 oz) ham
    • 30 ml (2 tablespoons) lard (use oil if not available)
    • 45 ml (3 tablespoons) fresh peeled shrimps
    • 50 g (2 oz) bean sprouts
    • 375 ml (3/4 pint) chicken stock
    • 30 ml (2 tablespoons) soy sauce
    • salt and pepper to taste

    Serve 8
