Ingredients

  • 100 g (1/4 lb) lean pork (or breast of chicken) buds (optional)
  • 1-2 medium onions
  • 8 medium Chinese dried mushrooms
  • 2-3 stalks golden needles (lily buds, optional)
  • 1-2 cakes bean curd
  • 2-3 leeks
  • 1 egg
  • 30 ml (2 tablespoons) soy sauce
  • 60-75 ml (4-5 tablespoons) vinegar
  • 5 ml (1 teaspoon) black pepper
  • 15 ml (1 tablespoon) sesame oil
  • 30 ml (2 tablespoons) corn flour (blended in 90 ml (6 tablespoons) water)
  • 15 ml (1 tablespoon) lard (use oil if not available)
  • 750 ml (1 1/2 pints) chicken or meat stock
  • 22 ml (1 1/2 tablespoons) Chinese dried shrimps
  • 30-45 ml (2-3 tablespoons) frozen or fresh green peas
  • 45 ml (3 tablespoons) shelled shrimps (frozen or fresh)
  • 1 chicken stock cube
  • 7 ml (1/2 tablespoon) salt

Serve 4
