Chinese Recipes - Fish Head Soup Recipe

Ingredients
- 1 large fresh water fish head (about 900g/2 lb)
- 2 stalks spring onion
- 225g/1/2 lb ham
- 37ml/2 1/2 tbsp lard (use oil if not available)
- 3 slices root ginger
- 30-45ml/2-3 tbsp white wine or dry sherry
- 10ml/2tsp salt
- 125ml/1/4 pint milk
Serve 8
