Ingredients

  • 1 large fresh water fish head (about 900g/2 lb)
  • 2 stalks spring onion
  • 225g/1/2 lb ham
  • 37ml/2 1/2 tbsp lard (use oil if not available)
  • 3 slices root ginger
  • 30-45ml/2-3 tbsp white wine or dry sherry
  • 10ml/2tsp salt
  • 125ml/1/4 pint milk

    Serve 8
