Ingredients

  • 225-350 g (1/2-3/4 lb) pork or beef tripe
  • 2 slices root ginger
  • 7 ml (1/2 tablespoon) salt
  • 100 g (1/4 lb) dried squid
  • 225 g (1/2 lb) Chinese dried green beans, or 450 g (1 lb) green peas
  • 22 ml (1 1/2 tablespoons) corn flour
  • 750 ml (1 1/2 pints) chicken stock
  • 1 chicken stock cube
  • salt and pepper

Serve 4

  • 60-75 ml (4-5 tablespoons) rice-flour
  • 1 egg
  • 15 ml (1 tablespoon) chopped chives (or spring onion)
  • 7 ml (1/2 tablespoon) salt
  • pepper to taste
  • 2-3 lettuce leaves
  • 45 ml (3 tablespoons) Winter Pickles or Tung Ts’ ai
  • 875 ml (1 3/4 pints) chicken stock

  • 675 g (1 1/2 lb) small fish (whiting, herring, sardines, etc)
  • 3 slices root ginger
  • 3 stalks spring onion
  • 675 g (1 1/2 lb) egg noodles
  • 45 ml (3 tablespoons) vegetable oil
  • 1 liter (2 pints) stock
  • salt and pepper to taste
  • 15 ml (1 tablespoon) corn flour blended in 90 ml (6 tablespoons) water or milk
  • 60 ml (4 tablespoons) fresh shelled shrimps

Serve 6
