Chinese Recipes - Steam Whole Fish Recipe

Ingredients
- 1.2-1.5 kg (2 1/2-3 1/2lb) fish (carp, flounder, halibut, mackerel, perch, pike, salmon. rainbow trout, mullet, bass, sea bass, sea bream, turbot, etc)
- 7 ml (1/2 tablespoon) salt
- 7 ml (1/2 tablespoon) sugar
- 7 ml (1/2 tablespoon) sesame oil
- 22 ml (1 1/2 tablespoons) soy sauce
- 4-5 stalks spring onion
- 4 slices root ginger
- 4-5 large Chinese dried mushrooms
- 2 rashers bacon (or lean and fat pork)
Garnish and dressing:
- 2 stalks spring onion
- 15 ml (1 tablespoon) lard (use oil if not available)
- 15 ml (1 tablespoon) sherry
- pepper to taste
- 15ml (1 tablespoons) soy sauce
Serve 6-8
