Chinese Recipes - Steam Whole Fish Recipe

Ingredients

  • 1.2-1.5 kg (2 1/2-3 1/2lb) fish (carp, flounder, halibut, mackerel, perch, pike, salmon. rainbow trout, mullet, bass, sea bass, sea bream, turbot, etc)
  • 7 ml (1/2 tablespoon) salt
  • 7 ml (1/2 tablespoon) sugar
  • 7 ml (1/2 tablespoon) sesame oil
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 4-5 stalks spring onion
  • 4 slices root ginger
  • 4-5 large Chinese dried mushrooms
  • 2 rashers bacon (or lean and fat pork)

Garnish and dressing:

  • 2 stalks spring onion
  • 15 ml (1 tablespoon) lard (use oil if not available)
  • 15 ml (1 tablespoon) sherry
  • pepper to taste
  • 15ml (1 tablespoons) soy sauce

Serve 6-8
