Chinese Recipes - Clear Simmer Carp Recipe

Ingredients
- 1 carp (about 900 g-1.35 kg/2-3 lb)
- 7 ml (1/2 tablespoon) salt
- 7 ml (1/2 tablespoon) sugar
- 30 ml (2 tablespoons) vegetable oil
- 4-5 slices root ginger
- 4-5 stalks spring onion
- 250 ml (1/2 pint) vegetable oil for semi-deep-frying
- 22 ml (1 1/2 tablespoons) lard (use oil if not available)
- 15 ml (1 tablespoon) dried shrimps
- 500 ml (1 pint) stock or water
- 30 ml (2 tablespoons) sherry or Chinese yellow wine
- salt and pepper to taste
Serve 6-8
