Ingredients

  • 1 carp (about 900 g-1.35 kg/2-3 lb)
  • 7 ml (1/2 tablespoon) salt
  • 7 ml (1/2 tablespoon) sugar
  • 30 ml (2 tablespoons) vegetable oil
  • 4-5 slices root ginger
  • 4-5 stalks spring onion
  • 250 ml (1/2 pint) vegetable oil for semi-deep-frying
  • 22 ml (1 1/2 tablespoons) lard (use oil if not available)
  • 15 ml (1 tablespoon) dried shrimps
  • 500 ml (1 pint) stock or water
  • 30 ml (2 tablespoons) sherry or Chinese yellow wine
  • salt and pepper to taste

    Serve 6-8
