Chinese Recipes - Soy-Braised Fish Recipe

Ingredients

  • 900 g (2 lb) fish (or piece of fish)
  • 4 ml (3/4 teaspoon) salt
  • 15 ml (1 tablespoon) corn flour
  • 7 ml (1/2 tablespoon) sesame oil
  • 3-4 stalks spring onion
  • 3-4 slices root ginger
  • 125 ml (1/4 pint) oil for shallow frying

    Sauce:

    • 60 ml (4 tablespoons) soy sauce
    • 15 ml (1 tablespoon) vegetable oil
    • 2.5 ml (1/2 teaspoon) salt
    • 90 ml (6 tablespoons) stock
    • 15 ml (1 tablespoon) sherry
    • 5 ml (1 teaspoon) sugar

      Serve 6-8
