Chinese Recipes - Suburban Fish-Head Casserole Recipe

Ingredients
- 1 large fish head (about 900 g- 1.2 kg/2-21 lb)
- 7 ml (1 tablespoon) salt
- 15 ml (1 tablespoon) corn flour
- 6 large Chinese dried mushrooms
- 60 ml (5 tablespoons) Cha Shao roast pork
- 2 cakes bean curd
- 4 cloves garlic
- 3 slices root ginger
- 4 leeks
- 125 ml ( 1/4 pint) vegetable oil for shallow-frying
- 500 ml (1 pint) stock
- salt and pepper to taste
- 22 ml (11 tablespoons) lard or chicken fat
- 22 ml (11 tablespoons) soy sauce
- 37 ml (2! tablespoons) sherry
Serve 6-8
