Ingredients

  • 125 ml (1/4 pint) vegetable oil for shallow-frying
  • 1 large fish head (900 g-1.35 kg/2-3 lb)
  • 5 ml (1 teaspoon) salt
  • 15 ml (1 tablespoon) corn flour
  • 100 g (1/4 lb) chicken giblets
  • 100-225 g (1/4-1/2 lb) pork sweet breads
  • 2 medium onions
  • 2 leeks
  • 3 cloves garlic
  • 3 slices root ginger
  • 250 ml (1/2 Pint) stock
  • 500 ml (1 pint) white wine or Chinese yellow wine
  • salt and pepper to taste

Serve 6-8
