Ingredients
- 125 ml (1/4 pint) vegetable oil for shallow-frying
- 1 large fish head (900 g-1.35 kg/2-3 lb)
- 5 ml (1 teaspoon) salt
- 15 ml (1 tablespoon) corn flour
- 100 g (1/4 lb) chicken giblets
- 100-225 g (1/4-1/2 lb) pork sweet breads
- 2 medium onions
- 2 leeks
- 3 cloves garlic
- 3 slices root ginger
- 250 ml (1/2 Pint) stock
- 500 ml (1 pint) white wine or Chinese yellow wine
- salt and pepper to taste
Serve 6-8
