Chinese Recipes - Quick-Fried Sliced Fish Fillet Recipe

Ingredients
- 675 g (1 1/2 lb) fillet of fish (sole, carp, bass, sea bream, halibut, cod, etc)
- 7 ml (1/2 tablespoon) salt
- 22 ml (1 1/2 tablespoons) corn flour
- 1 egg-white
- 2 slices root ginger
- 2 stalks spring onion
- 22 ml (1 1/2 tablespoons) wood ears
- 15 ml (1 tablespoon) corn flour
- 30 ml (2 tablespoons) white wine
- 30 ml (2 tablespoons ) lard (use oil if not available)
- 60 ml (4 tablespoons) stock
- 5 ml (1 teaspoon) sugar
- chicken stock cube
- salt and pepper to taste
- 125 ml (t pint) vegetable oil for shallow-frying
Serve 6-8
