Chinese Recipes - Quick-Fried Sliced Fish Fillet Recipe

Ingredients

  • 675 g (1 1/2 lb) fillet of fish (sole, carp, bass, sea bream, halibut, cod, etc)
  • 7 ml (1/2 tablespoon) salt
  • 22 ml (1 1/2 tablespoons) corn flour
  • 1 egg-white
  • 2 slices root ginger
  • 2 stalks spring onion
  • 22 ml (1 1/2 tablespoons) wood ears
  • 15 ml (1 tablespoon) corn flour
  • 30 ml (2 tablespoons) white wine
  • 30 ml (2 tablespoons ) lard (use oil if not available)
  • 60 ml (4 tablespoons) stock
  • 5 ml (1 teaspoon) sugar
  • chicken stock cube
  • salt and pepper to taste
  • 125 ml (t pint) vegetable oil for shallow-frying

Serve 6-8
