Chinese Recipes - Cantonese Onion and Ginger Crab Recipe

Ingredients
- 3 large crabs (about 1.35-1.8 kg/3-4 lb in all)
- 4 slices root ginger
- 2 medium onions
- 3 cloves garlic
- 3 stalks spring onion
- 250 ml (1 pint) vegetable oil for shallow-frying
- 250 ml (1/2 pint) chicken stock
- 5 ml (1 teaspoon) salt
- 37 ml (2 1/2 tablespoons) soy sauce
- 45 ml (3 tablespoons) sherry
- 15 ml (1 tablespoon) corn flour (blended in 60 ml (4 tablespoons) water)
- 7 ml (1/2 tablespoon) sesame oil
