Ingredients

  • 3 large crabs (about 1.35-1.8 kg/3-4 lb in all)
  • 4 slices root ginger
  • 2 medium onions
  • 3 cloves garlic
  • 3 stalks spring onion
  • 250 ml (1 pint) vegetable oil for shallow-frying
  • 250 ml (1/2 pint) chicken stock
  • 5 ml (1 teaspoon) salt
  • 37 ml (2 1/2 tablespoons) soy sauce
  • 45 ml (3 tablespoons) sherry
  • 15 ml (1 tablespoon) corn flour (blended in 60 ml (4 tablespoons) water)
  • 7 ml (1/2 tablespoon) sesame oil

Serve 6
