Chinese Recipes - Quick-Fried Sliced Fish in Classic Sauce Recipe

Ingredients

  • 450g/1lb fillet of white fish, sole, place, carp, halibut, etc
  • 7ml/1/2 tbsp salt
  • 30ml/2 tbsp corn flour
  • oil for deep-frying or semi-deep frying

Sauce:

  • 2 stalks spring onion
  • 3 slices root ginger
  • 30ml/2 tbsp soy sauce
  • 22ml/1 1/2 tbsp wine vinegar
  • 10ml/2 tsp sugar
  • 30ml/2 tbsp Chinese yellow wine or sherry
  • 30ml/2 tbsp stock
  • 1/2 chicken stock cubes, crushed37ml/2 1/2 tbsp lard (use oil if not available)

serve 6-8
