Chinese Recipes - Quick-Fried Sliced Fish in Classic Sauce Recipe

Ingredients
- 450g/1lb fillet of white fish, sole, place, carp, halibut, etc
- 7ml/1/2 tbsp salt
- 30ml/2 tbsp corn flour
- oil for deep-frying or semi-deep frying
Sauce:
- 2 stalks spring onion
- 3 slices root ginger
- 30ml/2 tbsp soy sauce
- 22ml/1 1/2 tbsp wine vinegar
- 10ml/2 tsp sugar
- 30ml/2 tbsp Chinese yellow wine or sherry
- 30ml/2 tbsp stock
- 1/2 chicken stock cubes, crushed37ml/2 1/2 tbsp lard (use oil if not available)
serve 6-8
