Ingredients

  • 1 carp (about 900 g/2 lb)
  • 10 ml (2 teaspoons) salt
  • 22 ml (1 1/2 tablespoons) plain flour
  • 22 ml (1 1/2 tablespoons) corn flour

Sauce:

  • 30 ml (2 tablespoons) sugar
  • 60 ml (4 tablespoons) vinegar
  • 15 ml (1 tablespoon) soy sauce
  • 30 ml (2 tablespoons) Chinese yellow wine or sherry
  • 45 ml (3 tablespoons) water
  • 15 ml (1 tablespoon) corn flour blended with 45 ml (3 tablespoons) water
  • 30 ml (2 tablespoons) lard (use oil if not available)

serve 6
