Chinese Recipes - Sai Pan Hsia or Rival Crab Recipe

Ingredients
- 225g/1/2lb white fish
- 7ml/1/2 tbsp salt
- 4 eggs
- 2 egg yolks
- 15ml/1 tbsp tomato puree
- 2 slices root ginger
- 2 stalks spring onion
- 45ml/3 tbsp lard (use oil if not available)
Sauce:
- 15ml/1 tbsp corn flour
- 60ml/4 tbsp chicken stock
- 15ml/1 tbsp shrimp sauce
- 5ml/1 tsp salt
- 30ml/2 tbsp dry sherry
serve 6
