Ingredients
- 12 large Pacific prawns (with 1 egg shells)
- 10 ml (2 teaspoons) salt
- 30 ml (2 tablespoons) Chinese yellow wine or dry sherry
- 45-60 ml (3-4 tablespoons) plain flour
- oil for deep-frying
Dips:
- 30 ml (2 tablespoons) Aromatic sauce and Pepper Mix (refer recipe)
- 60 ml (4 tablespoons) soy sauce mixed with 20 ml (4 teaspoons) chili sauce (divide between 2 saucer-sized dishes
serve 8-10

- 225g/1/2lb white fish
- 7ml/1/2 tbsp salt
- 4 eggs
- 2 egg yolks
- 15ml/1 tbsp tomato puree
- 2 slices root ginger
- 2 stalks spring onion
- 45ml/3 tbsp lard (use oil if not available)
Sauce:
- 15ml/1 tbsp corn flour
- 60ml/4 tbsp chicken stock
- 15ml/1 tbsp shrimp sauce
- 5ml/1 tsp salt
- 30ml/2 tbsp dry sherry
