Ingredients

  • 12 large Pacific prawns (with 1 egg shells)
  • 10 ml (2 teaspoons) salt
  • 30 ml (2 tablespoons) Chinese yellow wine or dry sherry
  • 45-60 ml (3-4 tablespoons) plain flour
  • oil for deep-frying

Dips:

  • 30 ml (2 tablespoons) Aromatic sauce and Pepper Mix (refer recipe)
  • 60 ml (4 tablespoons) soy sauce mixed with 20 ml (4 teaspoons) chili sauce (divide between 2 saucer-sized dishes

serve 8-10

Ingredients

  • 225g/1/2lb white fish
  • 7ml/1/2 tbsp salt
  • 4 eggs
  • 2 egg yolks
  • 15ml/1 tbsp tomato puree
  • 2 slices root ginger
  • 2 stalks spring onion
  • 45ml/3 tbsp lard (use oil if not available)

Sauce:

  • 15ml/1 tbsp corn flour
  • 60ml/4 tbsp chicken stock
  • 15ml/1 tbsp shrimp sauce
  • 5ml/1 tsp salt
  • 30ml/2 tbsp dry sherry

serve 6

Ingredients

  • 1 carp (about 900 g/2 lb)
  • 10 ml (2 teaspoons) salt
  • 22 ml (1 1/2 tablespoons) plain flour
  • 22 ml (1 1/2 tablespoons) corn flour

Sauce:

  • 30 ml (2 tablespoons) sugar
  • 60 ml (4 tablespoons) vinegar
  • 15 ml (1 tablespoon) soy sauce
  • 30 ml (2 tablespoons) Chinese yellow wine or sherry
  • 45 ml (3 tablespoons) water
  • 15 ml (1 tablespoon) corn flour blended with 45 ml (3 tablespoons) water
  • 30 ml (2 tablespoons) lard (use oil if not available)

serve 6
