Chinese Recipes – Filleted Yellow Fish with Sea Cucumber Recipe

Ingredients
- 225 g (1/2 lb) sea cucumber
- 450 g (1 lb) yellow fish (any suitable fish may be used)
- 12 ml (2 1/2 teaspoons) salt
- 3 stalks spring onion
- 1 egg
- 30 ml (2 tablespoons) lard (use oil if not available)
- 625 ml (1 1/4 pints) stock
- 1 chicken stock cube
- 45 ml (3 tablespoons) dry sherry
- 30 ml (2 tablespoons) wine vinegar
- 1 ml (1/4 teaspoon) white pepper
- 15 ml (1 tablespoon) corn flour (blended in 60 ml/4 tablespoons water)
- 50 g (2 oz) ham
Serve 6-8
