Chinese Recipes - Double Deep-Fried Quick-Braised Eels Recipe

Ingredients
- 1.2-1.35 kg (2 1/2-3 lb) eel (or eels)
- 45 ml (3 tablespoons) dry sherry
- 3 stalks spring onion
- 8-10 slices root ginger
- oil for deep-frying
- 22 ml (1 1/2 tablespoons) soy sauce
- 15 ml (1 tablespoon) soy paste or hoisin sauce
- 7 ml (1/2 tablespoon) sugar
- Pinch five-spice powder
- 60 ml (4 tablespoons) stock
- 1/2 chicken stock cube
- 60 ml (4 tablespoons) aromatic vinegar
Serve 6-8
