Chinese Recipes - Steamed Fish Recipe

Ingredients
- 900 g (2 lb) fish (shad, bream, mullet, salmon, trout, etc)
- 15 ml (1 tablespoon) salt
- 6 medium Chinese dried mushroom
- 8 slices ham
- 8 slices bamboo shoots (same size as ham)
- 7 ml (1/2 tablespoon) sugar
- 45-60 ml (3-4 tablespoons) pork fat (diced into tiny cubes)
- 3 slices root ginger
- 22 ml (1 1/2 tablespoons) lard (use oil if not available)
- 45 ml (3 tablespoons) dry sherry
- 3 stalks spring onion
Serve 6-8
