Chinese Recipes – Braised Fish with Bean Curd Recipe

Ingredients

  • 675 g (1 1/2 lb) fish (carp, pike, bream, mullet, etc)
  • 7 ml (1/2 tablespoon) salt
  • 45 ml (3 tablespoons) vegetable oil
  • 2 cakes bean curd
  • 2 slices root ginger
  • 30 ml (2 tablespoons) snow Pickle
  • 2 stalks spring onion
  • 1/2 chicken stock cube
  • 30 ml (2 tablespoons) soy sauce
  • 30 ml (2 tablespoons) dry sherry
  • 7 ml (1/2 tablespoon) sugar
  • 375 ml (3/4 pint) stock
  • 15 ml (1 tablespoon) lard (use oil if not available)

Serve 6-8

Chinese Recipes – Triple-Fried Crispy Yellow Fish Recipe

Ingredients

  • 0.9-1.2 kg (2-2 1/2 lb) fish (ideally yellow fish, a product of the Yangtze and China Sea, but almost any medium sized fish can be used)
  • 60 ml (4 tablespoons) flour
  • 60 ml (4 tablespoons) self-raising flour
  • 60 ml (4, tablespoons) water
  • 1/2 beaten egg
  • 3 stalks spring onion
  • 3 sprigs of parsley
  • oil for deep frying
  • 15 ml (1 tablespoon) lard (use oil if not available)
  • plain pinch five-spice powder
  • 5 ml (1 teaspoon) salt
  • pinch black pepper
  • 30 ml (2 tablespoons) dry sherry

Serve 6-8
