Chinese Recipes – Braised Fish with Bean Curd Recipe

Ingredients
- 675 g (1 1/2 lb) fish (carp, pike, bream, mullet, etc)
- 7 ml (1/2 tablespoon) salt
- 45 ml (3 tablespoons) vegetable oil
- 2 cakes bean curd
- 2 slices root ginger
- 30 ml (2 tablespoons) snow Pickle
- 2 stalks spring onion
- 1/2 chicken stock cube
- 30 ml (2 tablespoons) soy sauce
- 30 ml (2 tablespoons) dry sherry
- 7 ml (1/2 tablespoon) sugar
- 375 ml (3/4 pint) stock
- 15 ml (1 tablespoon) lard (use oil if not available)
Serve 6-8
