Ingredients

  • 350 g (8 lb) filleted fish
  • 5 ml (1 teaspoon) salt
  • 30 ml (2 tablespoons) corn flour
  • 1 egg-white
  • 2 stalks spring onion
  • oil for deep-frying
  • 15 ml (1 tablespoon) lard (use oil if not available)
  • 3 cloves garlic
  • 60 ml (4 tablespoons) stock
  • 30 ml (2 tablespoons) dry
  • 4 ml (3/4 teaspoon) salt

Serve 6-8
