Chinese Recipes - Plain Quick-Fried Large Shrimps Recipe

Ingredients
- 350g/3/4lb shrimp meat
- 7ml/1/2 tbsp salt
- 22ml/1 1/2 tbsp corn flour
- 1 3gg white
- 2 slices root ginger
- vegetable oil for deep-frying, or 250ml/1/2 pint for shallow-frying
- 15ml/1 tbsp lard (use oil if not available)
- 22ml/1 1/2 tbsp dry sherry
- 30ml/2 tbsp stock
- 10ml/2 tsp sesame oil
Serve 4-6
