Ingredients

  • 50-75g/2-3oz lean and fat pork
  • 2 slices root ginger
  • 2 stalks spring onion
  • 30ml/2 tbsp lard (use oil if not available)
  • 225g/1/2lb crab meat
  • 15ml/1 tbsp soy sauce
  • 5ml/1 tsp sugar
  • 30ml/2 tbsp dry sherry
  • 15ml/1 tbsp corn flour blended in 45ml/3 tbsp water
  • pepper to taste
  • 7ml/1/2 tbsp salt
  • 30ml/2 tbsp stock

Serve 4-6
