Ingredients

  • 1 large cut of knuckle of pork (about 1.35-1.8 kg/3-4 lb)
  • 30 ml (2 tablespoons) corn flour
  • 97 ml (6 1/2 tablespoons) soy sauce
  • 3 stalks leeks
  • oil for deep frying
  • 52 ml (3 1/2 tablespoons) oyster sauce
  • 125 ml (1/4 pint) water
  • 10 ml (2 teaspoons) sugar
  • 15 ml (1 tablespoon) star anise
  • 3 lettuce leaves

Serve 6-8
