Ingredients
- 1 large cut of knuckle of pork (about 1.35-1.8 kg/3-4 lb)
- 30 ml (2 tablespoons) corn flour
- 97 ml (6 1/2 tablespoons) soy sauce
- 3 stalks leeks
- oil for deep frying
- 52 ml (3 1/2 tablespoons) oyster sauce
- 125 ml (1/4 pint) water
- 10 ml (2 teaspoons) sugar
- 15 ml (1 tablespoon) star anise
- 3 lettuce leaves
Serve 6-8
