Chinese Recipes – Pork and Rani Roll with Heart of Chicken Liver Recipe

Ingredients
- 1 thin sheet of fat pork (about 275 g/10 oz)
- 1 thin sheet of lean pork (slightly smaller)
- 75 g (3 oz) chicken liver
- 2 eggs
- 15 ml (1 tablespoon) corn flour
- 3 stalks spring onion
- 1 thin slice of ham (same dimensions as lean pork)
Marinade for Fat Pork:
- 7 ml (1/2 tablespoon) salt
- 22 ml (1 1/2 tablespoons) sherry
- 10 ml (2 teaspoons) sugar
Marinade for Lean Pork:
- 15 ml (1 tablespoon) soy sauce
- 15 ml (1 tablespoon) sherry
- 5 ml (1 teaspoon) sugar
Serve 6-8
