Ingredients

  • 900 g (2 lb) belly of pork
  • 15 ml (1 tablespoon) red soy cheese
  • 5 ml (1 teaspoon) salt
  • 7 ml (1/2 tablespoon) sugar
  • 5 ml (1 teaspoon) red rice (or 6 large lettuce leaves 1/2 drop cochineal blended in 30 ml/2 tablespoons water)
  • 2 medium onions
  • 4 slices root ginger
  • 30 ml (2 tablespoons) dry sherry
  • 45 ml (3 tablespoons) vegetable oil
  • 5 ml (1 teaspoon) salt

Serve 6-8
