Chinese Recipes – Quick-Fried Fish Flavored Pork Liver Recipe

Ingredients
- 450 g (1 lb) pig’s liver
- 7 ml (1/2 tablespoon) salt
- 22 ml (1 1/2 tablespoons) corn flour
- 30ml (2 tablespoons) sherry
- 15 ml (1 tablespoon) vegetable oil
- 2 chili peppers
- 3 slices root ginger
- 3 cloves garlic
- 3 stalks spring onion
- 52 ml (3 1/2 tablespoons) lard (use oil if not available)
- 15 ml (1 tablespoon) salted black beans
- Sauce:
- 30 ml (2 tablespoons) soy sauce
- 22 ml (1 1/2 tablespoons) aromatic vinegar
- 45 ml (3 tablespoons) stock
- 30 ml (2 tablespoons) corn flour
Serve 6-8
