Ingredients

  • 450 g (1 lb) pig’s liver
  • 7 ml (1/2 tablespoon) salt
  • 22 ml (1 1/2 tablespoons) corn flour
  • 30ml (2 tablespoons) sherry
  • 15 ml (1 tablespoon) vegetable oil
  • 2 chili peppers
  • 3 slices root ginger
  • 3 cloves garlic
  • 3 stalks spring onion
  • 52 ml (3 1/2 tablespoons) lard (use oil if not available)
  • 15 ml (1 tablespoon) salted black beans
    • Sauce:
    • 30 ml (2 tablespoons) soy sauce
    • 22 ml (1 1/2 tablespoons) aromatic vinegar
    • 45 ml (3 tablespoons) stock
    • 30 ml (2 tablespoons) corn flour

      Serve 6-8
