Chinese Recipes – Lotus-Leaf Wrapped Long-Steamed Beef in Aromatic Ground Rice Recipe

Ingredients
- 1.35 kg (3 lb) beef (topside or silverside)
- 225 g (1/2 lb) beef fat
- 2 slices root ginger
- 30 nil (2 tablespoons) soy sauce
- 15 ml (1 tablespoon) hoisin sauce
- 15 ml (3 teaspoons) salt
- 2.5-ml (1/2 tablespoon) red soy bean curd cheese
- 10 ml (2 teaspoons) chili sauce
- 1 ml (1/4 teaspoon) pepper
- 7 ml (1/2 tablespoon) sugar
- 90-105 ml (6-7 tablespoons) ground rice (made aromatic by being first fried in a dry pan for 2-3 minutes and then ground)
- 1-2 sheets of dried lotus leaf
Serve 6-8
