Chinese Recipes – Stock or Water-Fried Beef Recipe

Ingredients
- 10 ml (2 teaspoons) salted black beans
- 550 g (1 1/4 lb) fillet of beef or rump steak
- 10 ml (2 teaspoons) salt
- 1 egg
- 22 ml (1 1/2 tablespoons) corn flour
- 5 ml (1 teaspoon) peppercorns
- 4 stalks young leeks
- 3 slices root ginger
- 4 stalks asparagus tips
- 3 cloves garlic
- 2 dried chili peppers
- 22 ml (1 1/2 tablespoons) lard (use oil if not available)
- 125 ml (1/2 pint) stock
- 22 ml (1 1/2 tablespoons) soy sauce
- 30 ml (2 tablespoons) dry sherry
- 30 ml (2 tablespoons) sesame oil
