Ingredients

  • 350 g (3/4 lb) ox kidney
  • 7 ml (1/2 tablespoon) salt
  • 52 ml (3 1/2 tablespoons) vegetable oil
  • 60-75 ml (4-5 tablespoons) dried wood ears (tree fungi)
  • 2 slices root ginger
  • 1 medium onion

Sauce:

  • 15 ml (1 tablespoon) brown sugar
  • 22 ml (1 1/2 tablespoons) dry sherry
  • 15 ml (1 tablespoon) corn flour (blended in 75 ml (5 tablespoons) water)
  • 22 ml (1 1/2 tablespoons) vinegar (Chinese aromatic if available )
  • 22 ml (1 1/2 tablespoons) soy sauce

Serve 6

Chinese Recipes – Stock or Water-Fried Beef Recipe

Ingredients

  • 10 ml (2 teaspoons) salted black beans
  • 550 g (1 1/4 lb) fillet of beef or rump steak
  • 10 ml (2 teaspoons) salt
  • 1 egg
  • 22 ml (1 1/2 tablespoons) corn flour
  • 5 ml (1 teaspoon) peppercorns
  • 4 stalks young leeks
  • 3 slices root ginger
  • 4 stalks asparagus tips
  • 3 cloves garlic
  • 2 dried chili peppers
  • 22 ml (1 1/2 tablespoons) lard (use oil if not available)
  • 125 ml (1/2 pint) stock
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 30 ml (2 tablespoons) dry sherry
  • 30 ml (2 tablespoons) sesame oil

Serve 6

  • 575 g (1 1/4 lb) brisket of beef
  • 5 ml (1 teaspoon) salt
  • 37 ml (2 1/2 tablespoons) soy sauce
  • 15 ml (1 tablespoon) hoisin sauce
  • 10 ml (2 teaspoons) soy bean curd cheese
  • pepper to taste
  • 30ml (2 tablespoons) sherry
  • 15 ml (1 tablespoon) vegetable oil
  • 2 slices root ginger
  • 2 chili peppers
  • 2 medium onions
  • 30 ml (2 tablespoons) Chinese winter pickle
  • 30 ml (2 tablespoons) Chinese snow pickle
  • 30 ml (2 tablespoons) Szechwan Cha Tsai pickle (hot)
  • 675 g (1 1/2 lb) potato, or yam
  • 350 g (3/4 lb) glutinous rice (pudding rice)
  • 5 ml (1 teaspoon) sugar

Serve 6-8
