Chinese Recipes – Lotus-Leaf Wrapped Long-Steamed Beef in Aromatic Ground Rice Recipe

Ingredients

  • 1.35 kg (3 lb) beef (topside or silverside)
  • 225 g (1/2 lb) beef fat
  • 2 slices root ginger
  • 30 nil (2 tablespoons) soy sauce
  • 15 ml (1 tablespoon) hoisin sauce
  • 15 ml (3 teaspoons) salt
  • 2.5-ml (1/2 tablespoon) red soy bean curd cheese
  • 10 ml (2 teaspoons) chili sauce
  • 1 ml (1/4 teaspoon) pepper
  • 7 ml (1/2 tablespoon) sugar
  • 90-105 ml (6-7 tablespoons) ground rice (made aromatic by being first fried in a dry pan for 2-3 minutes and then ground)
  • 1-2 sheets of dried lotus leaf

Serve 6-8

  • 1.35 kg (3 lb) leg or brisket of beef
  • 1/2 chicken
  • 6 slices root ginger
  • 450 g (1 lb) turnips
  • 225 g (1 lb) carrots
  • 10 ml (2teaspoons) salt
  • 1 1/2 chicken stock cubes
  • 5-6 large crisp lettuce leaves

Dip:

  • 22 ml (1 1/2 tablespoons) salt
  • 7 ml (1 1/2 teaspoons) black pepper

  • 900 g (2 lb) topside or rump of beef

Dressing:

  • 30 ml (2 tablespoons) soy sauce
  • 10 ml (2 teaspoons) chili sauce
  • a Pinch freshly ground pepper
  • 22 ml (1, tablespoons) vinegar (Chinese aromatic, if available)
  • 7 ml (1 tablespoon) sugar
  • 12 ml (3/4 tablespoon) sesame oil
  • 3 cloves garlic
  • 4-5 large crisp lettuce leaves

Serve 6-8
