Ingredients

  • 350-450 g (t-l lb) fillet of pork
  • 10 ml (2 teaspoons) salt
  • 1 egg-white
  • 22 ml (1 1/2 tablespoons) dry sherry
  • 30 ml (2 tablespoons) corn flour
  • 350 g (3/4 lb) Chinese celery/cabbage
  • 4 stalks spring onion
  • 2 slices root ginger
  • 3 dried chili peppers
  • 7 ml (1 1/2 teaspoons) peppercorns
  • 30 ml (2 tablespoons) vegetable oil
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 15 ml (1 tablespoon) hoisin sauce
  • 15 ml (1 tablespoon) sherry
  • 125 ml (1/4 pint) stock
  • 1/2 chicken stock cube
  • 30 ml (2 tablespoons) vegetable oil

Ingredients

  • 450-550 g (1-1 1/4 lb) belly of pork
  • 2 eggs
  • 30 ml (2 tablespoons) corn flour
  • 30 ml (2 tablespoons) sesame seeds
  • 37 ml (2 1/2 tablespoons), brown sugar (blended in 90 ml (6 tablespoons) water)
  • vegetable oil for semi-deep-frying (about 125 ml/1/4 pint)

  • 225 g (1/2 lb) beche de mer (sea cucumber-optional)
  • 12 large Chinese dried mushrooms
  • 1/2 duck (about 900 g/2 lb)
  • 1/2 chicken (about 900 g/2 lb)
  • 450 g (1 lb) smoked ham
  • 675 g (1 1/2 lb) stewing beef
  • 6 stalks golden needles (tiger lily buds)
  • 100 g (1/4 lb) dried squid
  • 450 g (1lb) bamboo shoots
  • 6-8 eggs
  • 1.35-1.8 kg (3-4 lb) knuckle of pork
  • 900 g (2 lb) pork bones
  • 1 pair pig’s trotters
  • 60 ml (4 tablespoons) lard
  • 2 large onions, chopped
  • 6 slices root ginger
  • 10 ml (2 teaspoons) salt
  • 15 ml (1 tablespoon) rock or granulated sugar
  • 105 ml (7 tablespoons) soy sauce
  • 750 ml (1 1/2 Pints) yellow wine or dry sherry
  • 750 ml (1 1/2 pints) boiling water
