Chinese Recipes - Deep-Fried Oyster Recipe

Ingredients
- 20-24 oysters
- salt and pepper to taste
- 3 stalks spring onion
- 1 egg
- 60-75 ml (4-5 tablespoons) water
- 36 ml (2 heaped tablespoons) self-raising flour
- 36 ml (2 heaped tablespoons) corn flour
- vegetable oil for deep-frying
- 1/2 lemon

Method:

Shell the oysters. Season them with salt and pepper. Clean and chop the spring onions.

Beat the egg for 10 seconds. Add the water and beat for another 5 seconds. Add the two flours gradually and mix into a batter. Finally add the chopped spring onion, and blend well.

Dip the oysters into the batter and deep-fry them, 3-4 at a time, in hot fat until golden. Drain them on absorbent paper.

When all the oysters have been fried and drained, place them on a well-heated dish. Sprinkle them with the balance of chopped spring onion, and lemon juice.
