Chinese Recipes - Deep-Fried Oyster Recipe

Ingredients

  • 20-24 oysters
  • salt and pepper to taste
  • 3 stalks spring onion
  • 1 egg
  • 60-75 ml (4-5 tablespoons) water
  • 36 ml (2 heaped tablespoons) self-raising flour
  • 36 ml (2 heaped tablespoons) corn flour
  • vegetable oil for deep-frying
  • 1/2 lemon

Method:

  1. Shell the oysters. Season them with salt and pepper. Clean and chop the spring onions.

  2. Beat the egg for 10 seconds. Add the water and beat for another 5 seconds. Add the two flours gradually and mix into a batter. Finally add the chopped spring onion, and blend well.

  3. Dip the oysters into the batter and deep-fry them, 3-4 at a time, in hot fat until golden. Drain them on absorbent paper.

  4. When all the oysters have been fried and drained, place them on a well-heated dish. Sprinkle them with the balance of chopped spring onion, and lemon juice.
