Chinese Recipes – Dry-Fried Small Fish Recipe

Ingredients
- 6 small fish (herring, large sardines, whiting, pilchards etc)
- 12 ml (2 1/2 teaspoons) salt
- 7 ml (1/2 tablespoon) pepper corns, lightly crushed
- 90 ml (6 tablespoons) Chinese, yellow wine or sherry
- 45ml (3 tablespoons) plain flour
- oil for deep-frying

Method:

Clean the fish and remove the innards. Rub the cavity of each fish with salt and pepper.

Pour wine or sherry over the fish and put in a wire basket to fry for 2 minutes.

Reduce heat and continue to fry at a slow simmer for 6-7 minutes, then increase the heat to fry for 1 minute over a high heat. Remove and drain.

Serve with Aromatic Salt and Pepper Mix.
