Chinese Recipes – Dry-Fried Small Fish Recipe

Ingredients

  • 6 small fish (herring, large sardines, whiting, pilchards etc)
  • 12 ml (2 1/2 teaspoons) salt
  • 7 ml (1/2 tablespoon) pepper corns, lightly crushed
  • 90 ml (6 tablespoons) Chinese, yellow wine or sherry
  • 45ml (3 tablespoons) plain flour
  • oil for deep-frying

Method:

  1. Clean the fish and remove the innards. Rub the cavity of each fish with salt and pepper.

  2. Pour wine or sherry over the fish and put in a wire basket to fry for 2 minutes.

  3. Reduce heat and continue to fry at a slow simmer for 6-7 minutes, then increase the heat to fry for 1 minute over a high heat. Remove and drain.

  4. Serve with Aromatic Salt and Pepper Mix.
