Chinese Recipes - Quick-Fried Prawn without Shell Recipe

Ingredients

  • 550g (1 1/4 lb) prawns (shelled)
  • 5 ml (1 teaspoon) salt
  • 1 egg-white
  • 22 ml (1 1/2 tablespoons) corn flour
  • 22 ml (1 1/2 tablespoons) self raising flour
  • 75-90 ml (5-6 tablespoons) vegetable oil
  • 22 ml (1 1/2 tablespoons) dry sherry
  • 15 ml (1 tablespoon) lard (use oil if not available)
  • 22 ml (1 1/2 tablespoons) stock

Serve 4-6

Method:

  1. Rub the prawns with salt. Beat the egg-white for 10 seconds with a fork and add the corn flour and self-raising flour. Beat them together until well blended. Coat the prawns with the batter and place them in a refrigerator for 1 hour.

  2. Heat the oil in a large frying pan. Add the prawns, stir and turn them a few times, and leave them to fry for 1 1/2 minutes over a high heat. Stir and turn them again, leave to fry for a further 30 seconds, and remove them from the pan.

  3. Pour away any excess oil. Add the lard and when it has all melted add the ginger, and then the spring onions. Stir them together a few times, add the sherry and stock, and return the prawns to the pan. Stir-fry over a high heat for 45 seconds and serve immediately.
