Chinese Recipes - Seven Star Crab Recipe

Ingredients

  • 7 medium crabs
  • 30ml/2 tbsp chopped onion
  • 15ml/1 tbsp chopped ginger
  • 5ml/1 tsp salt
  • 30ml/2 tbsp stock
  • 30ml/2 tbsp Chinese yellow wine or sherry
  • 22ml/1 1/2 tbsp soy sauce
  • 3 cloves garlic, finely chopped
  • 45ml/3 tbsp green peas
  • 37ml/2 tbsp lard (use oil if not available)
  • 2 eggs
  • 30ml/2 tbsp finely chopped ham

Method:

  1. Clean the crabs and steam them for 30 minutes. Scrape all the meat and crab eggs from the shells into a basin. Add half the onion, ginger, salt, stock, wine, soy sauce, corn flour, garlic and peas. Stir everything together until well mixed.

  2. Heat the lard in a frying pan. Add the remainder of the ginger and garlic. Stir them around a few times. Add the beaten eggs. When they are about to set, stir and scramble them together.

  3. Put the scrambled, eggs into the basin containing the crab meat. Stir the egg with the crab until, they are well blended.

  4. Place the seven crab shells on a heatproof dish. Spoon the mixture into the upturned shells, and pack it firmly. Insert the dish containing the shells into a preheated oven at 200C (400F)/Gas 6 to bake for 15 minutes.

  5. Arrange 6 of the shells upturned in one layer on a large dish, and place the last shell in the centre of the others. Sprinkle the shells with the chopped ham and serve. Each diner will take a shell.
