Chinese Recipes – Stir-Fried Fresh Squid Recipe

Ingredients

  • 675 g (1 1/2 lb) fresh squid
  • 2.5 ml (1/2 teaspoon) salt
  • 7 ml (1/2 tablespoon) vegetable oil
  • 1 green pepper
  • 2 slice root ginger
  • 2 stalks spring onion
  • 45 ml (3 tablespoons) lard (use oil if not available)
  • 22 ml (1 1/2 tablespoons) soy sauce
  • 2.5 ml (1/2 teaspoon) chili sauce
  • 22 ml (1 1/2 tablespoons) shrimp sauce (or shrimp paste)
  • 30 ml (2 tablespoons) stock
  • 30 ml (2 tablespoons) sherry

Serve 6-8

Method:

  1. Cut the squid into medium-sized rectangular pieces, and score criss­cross ,cuts half-way through each piece of squid. Rub them with the salt and oil. Cut the pepper into similar-sized pieces to the squid. Finely chop the root ginger and spring onion.

  2. Heat the lard in a large frying pan. When hot, add the squid, pepper, ginger and spring onion. Stir-fry over a high heat, and push them to one side of the pan.

  3. Pour the soy sauce, chili sauce, shrimp sauce, stock and sherry into the other side of the pan. Mix them over a high heat until well blended.

  4. Bring the squid, pepper, etc, over to mix with the sauce. Stir-fry them together over a high heat for a further minute and serve on a well-heated dish to be eaten immediately.
