Chinese Recipes - Quick-Fried Shrimps Set in Jade Recipe

Ingredients

  • 450 g/1 lb peeled shrimps
  • 10 ml/2 teaspoons salt
  • 22 ml/1 1/2 tbsp corn flour
  • 1 egg white
  • 15 ml/1 tbsp vegetable oil
  • 37 ml/2 1/2 tbsp lard (use oil if not available)
  • 450 g/1 lb green peas (fresh or frozen)
  • 45 ml/3 tbsp small button mushrooms
  • 45 ml/3 tbsp finely chopped smoked ham
  • 30 ml/2 tbsp soy sauce
  • 30 ml/2 tbsp dry sherry
  • 5 ml/1 tsp sugar
  • 30 ml/3 tbsp stock
  • pepper to taste

    Method:

    1. Rub the shrimps with the salt and corn flour. Wet them with the egg-white, add the oil and toss them together.

    2. Heat the lard in a large frying pan. Add the shrimps and stir-fry over a high heat for 1 minute, remove and keep hot. Quickly add the peas and all the other ingredients into the pan.

    3. Stir-fry over a high heat for 2 minutes. Return the shrimps to the pan, and stir-fry them together for 1 minute. Serve immediately on a well-heated dish.

    Note: This is a comparatively simple recipe, quick to cook, and almost invariably a success.
