Chinese Recipes - Braised Beef with Anise Recipe

Ingredients

  • 75-90 ml (5-6 tablespoons) vegetable oil
  • 900 g (2lb) chuck or brisket of beef
  • 2.5 mf (1/2 teaspoon) salt
  • 7 ml (1/2 tablespoon) sugar
  • pepper to taste
  • 52 ml (3 1/2 tablespoons) soy sauce
  • 60 m( (4 tablespoons) water
  • 3 cloves star anise
  • 45 ml (3 tablespoons) sherry
  • 3 cloves garlic

Serve 6-8

Method:

  1. Cut the beef into 4 pieces. Crush the garlic. Heat the oil in a frying pan. Turn the beef in the hot oil over a high heat for 2 minutes. Drain, and place it in a double-boiler.

  2. Add the salt, sugar, pepper, soy sauce, water and anise. Turn the beef several times to mix with the ingredients.

  3. Bring the water in the double-boiler to the boil. Reduce the heat to a brisk simmer. Leave the beef to cook under cover for 4 hours, turning it once an hour.

  4. During the last 30 minutes cooking, add the sherry and garlic. Cut the beef into large bite-sized pieces.

  5. Place them in a deep sided dish, and pour the sauce from the bottom of the double-boiler over them. This is an excellent dish to eat with rice.
