Chinese Recipes - Braised Short Beef Ribs with Salted Black Beans Recipe
Ingredients
- 1.35 kg (3 lb) beef ribs
- 22 ml (1 1/2 tablespoons) black beans
- 1 medium onion
- 3 cloves garlic
- 15 ml (1 tablespoon) soy sauce
- 30 ml (2 tablespoons) vegetable oil
- 165 ml (1/3 pint) water
- 30ml (2 tablespoons) sherry
- 2 slices root ginger
- pepper to taste

Method:

Chop the ribs with a sharp Chinese chopper into medium-sized pieces. Soak the black beans in Water for 10 minutes and drain them. Chop the onion coarsely, shred the ginger and crush the garlic. Mix and mash the black beans with the soy sauce and onion.

Heat the oil in a frying pan with a lid. Add the beef ribs, and stir fry over a medium heat for 5 minutes. Add the black beans, ginger, soy and onion mixture. Turn the beef with the mixture, for 3 minutes.

Pour in the water and bring to the boil. Turn the ribs several times. Reduce the heat to low, place a lid firmly over the frying pan, and allow the contents to simmer gently together for 1 hour. Turn every 20 minutes.

Add the sherry, garlic and pepper and continue to simmer for 15 minutes. Serve in a deep-sided dish for the diners to help themselves.
