Chinese Recipes - Deep-Fried Red-Cooked Pigeon Recipe

Ingredients

  • 2 fat pigeons
  • 125 ml (1/4 pint) water
  • 15 ml (1 tablespoon) five-spice (in pieces, not powder)
  • 15 ml (1 tablespoon) sugar
  • oil for deep-frying
  • 60 ml (4 tablespoons) soy
  • 2 slices root ginger
  • 3-4 lettuce leaves

Method:

  1. Chop the pigeons through, the bone into quarters. Mix the other ingredients in a bowl, and bring them to the boil in a heavy pot or casserole.

  2. Put the pigeon pieces into the boiling sauce in the casserole. Allow them to simmer gently for 30 minutes, turning them over every 10 minutes.

  3. Remove them from the heat and leave them to cool in the sauce for 30 minutes. Drain the pigeon pieces, and place them in an airy spot to dry.

  4. When the pigeon pieces are dry, place them in a wire basket and deep-fry them in hot oil until brown.

  5. Serve on a bed of lettuce leaves in a well-heated dish. To be consumed using Aromatic Salt and Pepper Mix and tomato ketchup as dips.
