Chinese Recipes - Pork Cackling Sandwiches Recipe
Ingredients
- 350g/3/4lb lean pork
- 3 stalks spring onion, finely chopped
- 4 slices root ginger, finely chopped
- 3 cloves ginger, finely chopped
- 22ml/1 1/2 tbsp soy sauce
- 15ml/1 tbsp hoisin sauce (optional)
- 30ml/2 tbsp sherry
- 5ml/1 tsp sugar
- 8 thin sheets of pork fat
- oil for deep-frying
- 2.5ml/1/2 tsp salt, pepper to taste
Batter:
- 1 egg
- 37ml/2 1/2 tbsp corn flour
- 37ml/2/ 1/2 tbsp flour
- 45ml/3 tbsp water
Dip:
- 45ml/3 tbsp Aromatic salt and pepper mix (refer recipe)

Method:

Cut the pork into thin slice. Place them in a basin. Add the spring onion, ginger, garlic, soy sauce, hoisin sauce, sherry, sugar, salt and pepper. Mix and rub them together with ‘the fingers. Leave to season for 2-3 hours.

Mix the batter ingredients together in a separate bowl and dip the seasoned pork slices in the batter. Divide the pork- slices into four lots. Arrange each batch, evenly spread out between two sheets of pork fat, to form a ’sandwich’.

Pile the ’sandwiches’ one on top of the other. Place a plate on top to ,flatten and weigh them down.

Heat the oil in the deep-fryer. Lower two ’sandwiches’ at a time in a wire basket to fry for 5-6 minutes until brown and, crispy.

Drain, and when all the ’sandwiches’ have been fried, put them on a chopping board and chop each piece into four (16 pieces altogether).

Arrange them neatly on a well-heated dish, and serve with Aromatic Salt and Pepper Mix.
