Chinese Recipes - Quick-Fried Lamb and Leeks Recipe
Ingredients
- 550 g (1 1/4 lb) leg of lamb
- 7 ml (1/2 tablespoon) soy sauce
- 7 ml (1/2 tablespoon) soy paste
- 3 cloves garlic
- 4 ml ( 3/4 teaspoon) corn flour
- 45 ml (3 tablespoons) lard (use oil if not available)
- 4 young leeks
- 3 slices root ginger
- 30 ml (2 tablespoons) Chinese yellow wine or dry sherry
- 45 ml (3 tablespoons) oil
- 2.5 ml (1/2 teaspoon) salt

Method:

Cut the lamb into medium sized thin slices. Mix and rub them with the soy sauce, soy paste, chopped garlic, corn flour and 15 ml (1 tablespoon) oil. Leave to season for 30 minutes. Clean and cut the leeks slantwise into small sections.

Heat the ginger in the remainder of the oil in a large frying pan. Add the lamb and spread the pieces out over the surface of the pan. Stir-fry quickly over a high heat for 1 1/2 minutes; remove the lamb and set aside.

Melt the lard in the pan over a high heat. Add the leeks. Sprinkle with the salt and stir them quickly for 1 1/2 minutes.

Return the lamb to the pan to turn and stir with the leeks. Sprinkle with the wine or sherry. Continue to stir and turn over a high heat for 1 1/2 minutes and serve.
Note: This is a quick and effective dish, which can be cooked when the meal has already started. It must be eaten immediately after the food leaves the pan.
