Chinese Recipes – Quick-Fried Ox Kidney with Wood Bars Recipe
Ingredients
- 350 g (3/4 lb) ox kidney
- 7 ml (1/2 tablespoon) salt
- 52 ml (3 1/2 tablespoons) vegetable oil
- 60-75 ml (4-5 tablespoons)Â dried wood ears (tree fungi)
- 2 slices root ginger
- 1 medium onion
Sauce:
- 15 ml (1 tablespoon) brown sugar
- 22 ml (1 1/2 tablespoons) dry sherry
- 15 ml (1 tablespoon) corn flour (blended in 75 ml (5 tablespoons) water)
- 22 ml (1 1/2 tablespoons) vinegar (Chinese aromatic if available )
- 22 ml (1 1/2 tablespoons) soy sauce

Method:

Trim the kidney and cut it into long, thin strips. Rub these with the salt and 7 ml (1/2 tablespoon) oil. Soak the wood ears in water for 15 minutes and then wash them in 2 changes of water.

Shred the ginger, and cut the onion into thin slices. Mix the sauce ingredients together until well blended.

Heat 45 ml (3 tablespoons) oil in a frying pan. Add the onion and ginger and stir-fry over a high heat for 1 minute. Add the kidney and wood ears, stir and turn them over a high heat for 1 1/2 minutes.

Pour the sauce mixture evenly over the contents. Continue to stir-fry over a high heat for 1 minute and serve immediately.
