Chinese Recipes – Shredded Pork with Snow Pickle Recipe

Ingredients
- 225 g (1/2 lb) lean pork
- 225 g (1/2 lb) belly of pork
- 225 g (1/2 lb) bamboo shoots
- 15 ml (1 tablespoon) corn flour
- 52 ml (3 1/2 tablespoons) vegetable oil
- 37 ml (2 1/2 tablespoons) snow pickle
- 22 ml (1 1/2 tablespoons) soy sauce
- 22 ml (1 1/2Â tablespoons) dry sherry

Method:

Cut the pork into double-matchstick-thick shreds. Cut the bamboo shoots into similar-sized strips. Sprinkle and rub the pork with the corn flour and 7 ml (1/2 tablespoon) oil.

Chop the pickles into small pieces. Heat the oil fiercely in a large frying pan. Add the shredded pork, and stir-fry over a high heat for 1 1/2 minutes.

Add the pickle, soy sauce, bamboo shoots and sherry. Continue to stir-fiy over a high heat for 2 1/2 minutes. Serve immediately.
