Chinese Recipes – Chicken in Black Bean Sauce Recipe

Ingredients

  • 350-450g/3/4-1 lb chicken meat (breast and leg)
  • 22ml/1 1/2 tbsp corn flour
  • 75-90ml/5-6 tbsp lard (use oil if not available)

Sauce:

  • 15ml/1 tbsp salted black bean
  • 1 large onion
  • 3 slices root ginger
  • 1 chili pepper
  • 1 red pepper
  • 3 cloves garlic, crushed
  • 30ml/2 tbsp dry sherry
  • 15ml/1 tbsp corn flour, blended in 90ml/6 tbsp stock
  • 22ml/1 1/2 tbsp soy sauce
  • 5ml/1 tsp sugar

Serve 6-8

Method:

  1. Cut the chicken into medium-sized strips. Rub these with the corn flour mixture. Soak the black beans in water for 20 minutes and drain them.

  2. Cut the onion into very thin slices and the ginger into shreds. Shred the peppers into similarly sized pieces, after removing the pips.

  3. Heat the lard in frying pan over a high heat. Add the chicken strips one by one and spread them over the surface of the pan. Stir-fry for 1 minute, and remove with a perforated spoon.

  4. Pour away half of any excess fat in the pan. Add the black beans, onion and ginger and mash them together. Stir-fry over a high heat for 1 minute and add the crushed garlic. Stir and mix them well together in the pan.

  5. Return the chicken pieces to the pan and stir and turn them until well mixed with the other ingredients. Continue to stir-fry for 1 1/2 minutes.

  6. Place on a well-heated dish to be serve immediately.
