Chinese Recipes – Chicken Poached in a White Marinade Recipe

Ingredients
White Marinade :
- 1.5 liters (3 pints) water
- 6-8 slices root ginger
- 3 medium onions, cut in half
- 30 ml (2 tablespoons) salt
- 45 ml (3 tablespoons) five-spice (in pieces, not powder)
- 4 cloves garlic
- 1.35 kg (3 lb) fresh young chicken
Serve 6-8

Method:

Prepare the marinade by heating all the ingredients and simmering them together for 1 hour. The five-spice pieces should be contained in a muslin bag.

Remove the giblets of the chicken and clean the bird thoroughly. Cook and serve as Chicken Poached in soy Marinade recipe.
