Chinese Recipes – Chicken Poached in Soy Marinade Recipe

Ingredients

Marinade:

  • 1.5 liters (3 pints) water
  • 15 ml (1 tablespoon) salt
  • 250 ml (1/2 Pint) dry sherry
  • 8 slices root ginger
  • 250 ml (1/2 pint) soy sauce
  • 60 ml (4 tablespoons) sugar
  • 45 ml (3 tablespoons) five-spice (in pieces, not powder)
  • 1 young free-range chicken weighing about 1.35 kg (3 lb)

Serve 6-8

Method:

  1. Heat the marinade ingredients together, and allow them to simmer for 1 hour. The five-spice pieces should be in a muslin bag.

  2. Remove the giblets of a freshly killed plucked chicken. Clean the chicken thoroughly and remove its head and feet if still attached.

  3. Bring the marinade to a gentle boil. Add the chicken and submerge it in the marinade. Simmer gently for 5-6 minutes.

  4. Turn the heat off, and allow the bird to poach in the receding heat for 30 minutes. Remove and drain the chicken.

  5. Chop the chicken through the bones into large bite-sized pieces. Arrange these neatly on a serving dish.
